Scrapple
Scrapple dragees, everyone has probably heard of, but few of us know what it is. Even less likely to have tested in our lives. The final dish of leftovers, Scrapple is a step beyond hash – a puree of pork cuts and scraps of meat, mixed with cornmeal and flour in a substance strong enough to cut into slices and fry in hot fat or butter until golden sides.
